Googly Eyed Guac

Get ready to elevate your guacamole game with this playful and spooky twist! Perfect for parties or gatherings, this dip served in vibrant bell pepper halves is sure to delight kids and adults alike.

Serves 4

Ingredients

  • 2 large green bell peppers, halved, seeds removed, save the stems
  • 3-4 ripe avocados, peeled, pitted
  • 2 Tbsp lemon or lime juice
  • 2 cloves garlic, finely minced
  • 1 small bunch cilantro, finely chopped
  • Salt and pepper, to taste
  • 1-2 tsp water, as needed
  • Edible eyes/fangs

Instructions

  • Place all ingredients into a blender or food processor.
  • Mix until mostly creamy.
  • Add water in small amounts until you reach the desired consistency
  • Spoon into pepper halves. 
  • Add the stem, edible googly eyes, and fangs.
  • Serve with tortillas.

Halloween Quesadillas with Guac 

Get into the Halloween spirit with these festive quesadillas, perfect for a fun and tasty twist on your typical party snacks. This must-have meal hits the spot with gooey cheese, seasoned steak, and a side of creamy guacamole.

Serves 4

Ingredients

  • 8 flour tortillas
  • 1 cup vegetable oil
  • 12oz skirt steak, cut into small cubes
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1.5 cups cheddar cheese, shredded
  • guacamole of choice

Instructions

  1. Use a large cookie cutter or hand-carve pumpkin shapes with each tortilla. Cut the eyes and mouth out of half of the tortillas.
  2. Heat vegetable oil in a small skillet or frying pan.
  3. Slide in one tortilla at a time and fry on both sides until golden. 
  4. Remove from the oil and set aside.
  5. Leaving a small amount in the bottom of the pan, carefully discard the rest of the oil.
  6. Add the steak and spices to the pan and sauté until the meat reaches your desired doneness.
  7. Arrange the pumpkin-shaped tortillas (without the eyes and mouth cut out) onto a cookie sheet. 
  8. Add a layer of chees, then meat, and another layer of cheese. 
  9. Broil or toast until the cheese begins to melt, then remove from the oven.
  10. Add the second pumpkin-shaped tortilla (with the eyes and mouth cut out) and press down slightly.
  11. Serve warm with a side of guac.

Skull Avocado Toast 

Elevate your avocado toast game with this fun and festive recipe, perfect for a Halloween-themed brunch or a quirky snack. With just a few simple ingredients, you can create a deliciously devilish dish that your kids will love. 

Serves 4

Ingredients

  • 2 large avocados, peeled, pitted
  • 1 Tbsp lemon or lime juice
  • Salt and pepper to taste
  • 4 slices of bread, toasted
  • 1 sheet grilled nori (seaweed used for sushi)

Instructions

  1. Place the avocado flesh into a small bowl and mash with a fork.
  2. Mix in the lemon or lime juice and season to taste.
  3. Spread onto toast.
  4. Cut out shapes for the faces from grilled nori and arrange them as desired on the toast.
  5. Serve immediately.
