Balancing a busy family schedule doesn’t mean compromising on nutrition or flavor. This collection of easy-to-make recipes stars the nutrient-rich avocado, offering families delicious, quick options for breakfast, lunch, and dinner.

Turkey Avocado Sliders

This deliciously fun, kid-friendly burger is perfect for school-night dinners. Packed with protein and healthy fats, these sliders are sure to please both kids and adults alike!

Serves 4-8


Ingredients

  • 1 lb ground turkey meat
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/2 tsp salt
  • 8 slices of cheese of choice
  • 8 mini rolls or buns
  • 2 cups lettuce of choice
  • 1 avocado, peeled, pitted, sliced
  • 1 tomato, sliced

Instructions

  • Serve immediately.
  • Divide the meat into 8 sections. Roll each into a ball.
  • Place meatballs on a cookie sheet and press down to form flat patties.
  • Season both sides of the patties.
  • Grill, broil, or pan-fry for 4-6 minutes per side, until fully cooked (165°F internal temperature).
  • Add cheese and allow to melt.
  • Add a layer of lettuce on the bottom half of the bun.
  • Add meat patty with cheese.
  • Top with avocado, tomato, and the top half of the bun.

Avocado Quesadillas

Ingredients

  • 4 flour tortillas
  • 2 cups jack cheese, shredded
  • 2 avocados, peeled, pitted, sliced

Instructions

  1. Place tortillas flat on a cutting board.
  2. Add a layer of cheese.
  3. To half the tortilla, add avocado slices.
  4. Fold tortilla in half.
  5. Place on a hot grill for 1-2 minutes.
  6. Flip over and cook for 1-2 minutes.
  7. Remove from the grill and place on a cutting board.
  8. Cut into three wedges each and serve warm.

Taco Meat Ingredients

  • 1 Tbsp cooking oil
  • 1 lb lean ground beef

  • 1/4 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 1/8 tsp salt
  • 1/4 cup water

Taco Meat Instructions

  1. Heat oil in a medium skillet.
  2. Brown meat over medium high heat.
  3. Lower the heat, add water and stir in spices.
  4. Cover and simmer for 5 minutes.

Bowl Ingredients

  • 4 cups white rice, cooked
  • 1 large avocado, peeled, pitted, sliced 
  • 1 cup cheddar cheese, shredded
  • 1/2 cup pico de gallo
  • 1/4 cup sour cream
  • 1-2 tsp milk

Bowl Instructions

  1. Spoon rice into individual bowls.
  2. Top with taco meat, cheddar cheese, pico de gallo, and avocado.
  3. Add sour cream and milk to a small bowl and mix together.
  4. Drizzle sour cream mixture over each taco bowl.
  5. Serve immediately.

Avocado Chicken Pasta 

This convenient dish combines springy corkscrew pasta with cherry tomatoes, creamy avocado, and rotisserie chicken. A versatile meal that can be served warm or cold, this pasta salad is a perfect lunchbox option.

Dressing Ingredients

  • 1/4 cup olive oil
  • 1 Tbsp vinegar
  • 2 Tbsp lemon juice
  • 1 tsp Italian seasoning

Dressing Ingredients

  • 4 cups cooked fusilli
  • 1 cup cherry tomatoes, quartered

Pasta Instructions

  • 8 eggs

  • 1 small tomato, diced 
  • ⅓ cup green onion, chopped
  • 1.5  cups mild cheddar cheese, shredded
  • Salt and pepper, to taste

Instructions

  • Serve warm.
  • Preheat oven to 350˚.
  • Grease a muffin tray.
  • Crack eggs into a medium bowl, add milk, salt and pepper, and then whisk thoroughly.
  • Stir in avocado, tomato, green onion, and half of the cheddar cheese.
  • Pour into muffin tins.
  • Top with the remaining cheese.
  • Bake for 30 minutes or until a toothpick comes out clean.
