Serves 2

Salad Ingredients

  • 1 Tbsp sesame oil
  • 1 Tbsp vinegar
  • ½ cucumber, sliced thinly into ribbons
  • 1 avocado, peeled, pitted, sliced thickly
  • salt and pepper, to taste

Salad Instructions

  1. Whisk oil and vinegar.
  2. Place cucumber and avocado in a small bowl.
  3. Drizzle with dressing and toss lightly.
  4. Season to taste.
  5. Set aside.

  • 1.5 cup baby spinach, blanched or sauteed 
  • olive oil spray
  • 6 egg whites
  • salt and pepper to taste

Omelet Instructions

  1. In a small bowl, whisk egg whites
  2. Spray a non-stick skillet with olive oil
  3. Add egg whites to the skillet and cook over medium heat until nearly set. 
  4. Sprinkle spinach onto the eggs and cook until lightly golden on both sides.
  5. Serve immediately with salad on the side, garnished as desired.
