Apple, Avocado & Chicken Salad

Serves 2

Dressing Ingredients

  • 2 Tbsp olive oil
  • 2 Tbsp lemon juice
  • ½ tsp lemon pepper
  • ½ tsp garlic powder
  • Salt to taste

Dressing Instructions

  1. Place all dressing ingredients into a small bowl.
  2. Whisk until thoroughly mixed.
  3. Set aside.

Chicken Ingredients

  • 1 skinless, boneless chicken breast
  • 1 Tbsp olive oil
  • 1 tsp lemon pepper
  • ¼ tsp salt 

Chicken Instructions

  1. Drizzle olive oil over both sides of the chicken to lightly coat.
  2. Sprinkle on lemon pepper and salt.
  3. Bake at 400˚ for 20–25 minutes until the internal temperature reaches 165˚.
  4. Remove from the oven and slice.

Salad Ingredients

  • 4 cups mixed greens
  • 1 avocado, peeled, pitted, sliced
  • 1 Granny Smith apple, peeled, cored, sliced
  • ½ small bell pepper, deseeded, sliced

Salad Instructions

  1. Place the greens in a medium bowl and drizzle with half of the dressing.
  2. Toss until coated.
  3. Top with bell peppers, apple, avocado, and chicken.
  4. Drizzle with the remaining dressing.
  5. Serve immediately.

Avocado Toast with Crumbled Feta & Pumpkin Seeds

This tasty version of avocado toast is a deliciously healthy way to start your day or enjoy as a light snack. With its creamy avocado, savory feta, and crunchy seeds, it’s a perfect blend of flavors and textures that will satisfy your cravings.

Serves 2

Ingredients

  • 2-4 slices of bread of choice, toasted
  • 1 large avocado, peeled, pitted, sliced
  • 6 ounces Feta cheese, crumbled
  • ¼ cup pumpkin seeds
  • 1 Tbsp sesame seeds
  • 1 tsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Crumble the cheese over each slice of toast.
  2. Add avocado slices.
  3. Drizzle olive oil over the top.
  4. Salt and pepper to taste.
  5. Sprinkle with pumpkin and sesame seeds.
  6. Serve immediately.

Roasted Sweet Potato & Avocado Tacos

These tacos are a wholesome and yummy twist on a classic dish. Packed with flavorful ingredients and simple to prepare, they make for a perfect meal any day of the week!

Serves 2-4

Ingredients

  • 1 sweet potato, cubed, baked
  • 4 flour tortillas
  • 1 cup black or kidney beans, drained
  • 1 cucumber sliced
  • 2 tomatoes, sliced
  • 1 avocado, peeled, pitted, sliced
  • 2 large radishes, sliced
  • 1 cup cole slaw
  •  ⅓ cup sprouts of choice
  • 1 Tbsp sesame seeds
  • Salt and pepper, to taste

Instructions

  1. Mash half the sweet potatoes with a fork.
  2. Heat tortillas and place them on a plate or cutting board.
  3. To half of the tortillas, spread a layer of mashed sweet potatoes.
  4. Layer with avocado, tomato, radish, sprouts, and sesame seeds.
  5. Salt and pepper to taste.
  6. To the remaining half of the tortillas, add a layer of cole slaw and beans.
  7. Top with avocado and sweet potato cubes. 
  8. Salt and pepper to taste.
  9. Devour immediately.
