Carne Asada Tacos

Serves 6-8

Ingredients

  • 1 orange, juiced
  • 2 limes, juiced
  • 1/3 cup olive oil
  • 1 serrano chile, stemmed and finely chopped
  • 1 red onion, chopped
  • 4 cloves garlic, minced
  • 1/2 cup cilantro, chopped
  • 1 Tbsp cumin
  • 1 Tbsp smoked paprika
  • 1 Tbsp dried oregano
  • 1 Tbsp chopped fresh thyme
  • 2 tsp chili powder
  • 1/4 tsp freshly ground black pepper
  • 2 tsp kosher salt
  • 2 lbs flank, skirt, or flap steak

Instructions

  1. In a blender, add all ingredients except the meat. Blend until smooth.
  2. Place the steak in a gallon-size sealable bag (or a shallow dish) and pour in the blended marinade over the meat.
  3. Let stand at room temperature for 30 minutes or in the refrigerator for up to 2 hours.
  4. Preheat a grill or grill pan to high. Remove the steak from the plastic bag and generously season it with salt. 
  5. Preheat grill to medium-high heat (400-450°F). Grill steaks for 4-8 minutes per side, depending on the thickness. 
  6. Remove steaks and allow to rest for 5-10 minutes. 
  7. Slice the steak against the grain into 1/2-inch pieces.
  8. Serve warm with tortillas and all the taco toppings:
    • Salsa
    • Cotija cheese or queso fresco
    • Guacamole or avocado slices
    • Diced onion 
    • Diced tomatoes
    • Chopped cilantro
    • Lime wedges
