Lime Dressing Ingredients
- 2 Tbsp lime juice
- 1/4 cup extra-virgin olive oil
- 1 clove garlic, minced
- 1 Tbsp maple syrup
- 1/2 tsp Dijon mustard
- salt and pepper to taste
Lime Dressing Instructions
- Add ingredients to a small bowl and whisk together.
- Set aside.

- 2 peaches, pitted, halved
- 1-2 Tbsp canola oil

- Place the cut side down on a preheated medium-hot grill (around 400°F).

- Remove from the grill and allow to cool.

- 4 cups baby spinach
- 1 large ripe avocado, skinned, pitted, sliced
- ⅔ cup feta cheese, crumbled
- ¼ cup walnuts, chopped

Mango Salsa Ingredients
- 1 ripe mango, peeled and diced
- ¼ cup red onion, finely chopped
- ¼ cup bell pepper, finely chopped
- ¼ cup fresh cilantro, chopped
- 1 garlic clove, minced
- 1 Tbsp extra virgin olive oil
- 1 tsp lime juice
- Salt and pepper, to taste
Mango Salsa Instructions
- Add all salsa ingredients to a bowl.
- Toss lightly to combine.
- Set aside.
Fish Ingredients
- 6-8 oz white fish, cut into 1-inch strips
- 1/2 cup panko breadcrumbs
- 1/2 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp sea salt
- 1/8 tsp black pepper
- 1 egg, beaten
- 1-2 Tbsp water
Fish Instructions
- Preheat the air fryer to 375 degrees.
- Add the panko, garlic powder, chili powder, salt, and black pepper to a shallow dish or bowl. Stir to combine.
- Add egg and water to another shallow dish and whisk to combine.
- Pat fish dry with paper towels. Cut into four 1-inch thick pieces.
- Sprinkle with salt and pepper.
- Dip each piece of fish into the egg mixture, letting any excess drip off.
- Coat with bread crumbs.
- Repeat with the remaining fish.
- Add fish to the air fryer.
- Mist with olive oil spray.
- Cook for 4 minutes.
- Flip the fish over and mist with olive oil spray.
- Cook 2 minutes until golden brown and crispy.
- Remove from the air fryer and set aside on a cooling rack.

- Heat grill to medium-high.
- In a small bowl, mix all spices with garlic and lime juice.

- Turn the tri-tip over and sear for another 10 minutes.
- Turn the heat down to medium and close the lid.
- Allow the meat to cook for about 10-15 minutes, until it reaches the desired doneness.
- Remove the tri-tip from the grill and allow it to rest on a cutting board for at least 10 minutes before slicing.
