Avocado Chocolate Chip Cookies

Ingredients
- 1 large avocado, cut in half, seeded, and peeled
- ½ cup granulated or coconut sugar
- ½ cup brown sugar
- 2 Tbsp. coconut oil, melted
- 2 eggs
- 1 tsp. vanilla extract
- 1 tsp. lemon juice
- 2 1/4 cups flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350F. Line a baking sheet with parchment paper.
- Add avocado, coconut oil, and sugars to a bowl and mix thoroughly. Mix in the lemon juice, eggs, and vanilla.
- Sift together the flour, baking soda, and salt. Add the dry ingredients to the avocado mixture and stir until combined.
- Stir in the chocolate chips.
- Spoon onto the baking sheet.
- Bake for about 10-11 minutes until lightly golden brown and remove from oven. Allow to cool slightly on the baking sheet, and then move to a cooling rack.

Avocado Brownies

- 1 large avocado, cut in half, seeded, and peeled
- 2 eggs
- 1 tsp. vanilla
- 1/2 cup coconut sugar
- 3 Tbsp. coconut oil
- 1/2 cup almond flour (or cashew or hazelnut flour)
- 1/2 cup cocoa powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup chocolate chips
- 1/3 cup walnuts, chopped (optional)
Instructions
- Preheat oven to 350F.
- Line a square 9×9 pan with parchment paper.
- Place avocado, eggs, vanilla, coconut sugar, and coconut oil in a food processor. Process until creamy.
- Add flour, cocoa powder, baking soda, and salt and process until completely combined.
- Mix in chocolate chips and nuts.
- Pour the batter into the pan and spread evenly.
- Bake for 17 – 20 minutes until the top bounces back with a gentle touch.
- Allow to cool before cutting into squares and serving.
Avocado Cupcakes

Cupcakes:
- 2 1/4 cups cake flour (sifted before measuring)
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 Tbsp. butter, room temperature
- 1 large avocado, halved, seeded, and peeled
- 1 cup granulated sugar
- 1 tsp. vanilla extract
- 2 eggs
- 1 cup buttermilk
Key Lime Buttercream Frosting:
- 3 cups powdered sugar (more as needed)
- 1 small (or ½ large) avocado, halved, seeded, and peeled
- 1/4 cup butter, room temperature
- 1/4 cup cream cheese, room temperature
- 2 Tbsp. lime or key lime juice
- 1 Tbsp. milk (more as needed)
- 1 tsp. vanilla extract
Instructions – Cupcakes
- Preheat oven to 325F.
- Line standard cupcake pans with 18 paper liners.
- In a bowl, sift together the flour, baking powder, baking soda, and salt.
- In a stand mixer bowl, puree the avocado thoroughly. Add in the sugar and mix. Beat in the vanilla and eggs one at a time, mixing well after each addition. On low mixer speed, add the buttermilk and beat until just combined.
- Slowly add the flour mixture, mixing until just combined.
- Add batter to cupcake liners.
- Bake until golden on top, about 18-20 minutes, or until a wooden toothpick comes out clean.
- Cool cupcakes for 10 minutes, then remove from pans and cool completely on a rack before frosting.
Instructions – Frosting
- In the bowl of a stand mixer, cream together butter, avocado, and cream cheese on medium-high for 3 minutes. Stop occasionally to scrape the sides of the bowl with a spatula.
- Set the mixer speed to low and slowly add the powdered sugar. Mix completely.
- Add lime juice and mix well. Add vanilla and then milk, a few drops at a time, until the frosting is fluffy. Increase speed to medium-high and beat for another 5 minutes. Adjust the consistency of the frosting as desired with more powdered sugar or milk.
- Frost cupcakes and decorate as desired.
