Chunky Guacamole
Ingredients
- 3-4 ripe avocados, peeled, pitted
- 1 Tbsp freshly-squeezed lemon or lime juice
- 2 cloves garlic, minced
- 1 Roma tomato, finely chopped
- ⅓ cup red or white onion, finely chopped
Instructions
- Mash avocados with a fork and mix in lemon or lime juice and garlic.
- Stir in remaining ingredients.
- Cover tightly and chill until ready to serve.

Creamy Guacamole
Ingredients
- 3-4 ripe avocados, peeled, pitted
- 1.5 Tbsp lemon or lime juice
- 1 clove garlic, minced
- 1 Tbsp cilantro, finely chopped
- Salt and pepper, to taste
- 1-2 tsp water, as needed
Instructions
- Cover tightly and chill until ready to serve.
- Place all ingredients into a blender or food processor.
- Mix until creamy.
- Add water in small amounts until you reach the desired consistency
- Preheat grill to medium-high heat (400-450°F). Grill steaks for 4-8 minutes per side, depending on the thickness.
- Remove steaks and allow to rest for 5-10 minutes.
- Slice the steak against the grain into 1/2-inch pieces.
- Serve warm with tortillas and all the taco toppings:
- Salsa
- Cotija cheese or queso fresco
- Guacamole or avocado slices
- Diced onion
- Diced tomatoes
- Chopped cilantro

Spicy Guacamole
Ingredients
- 3-4 avocados, peeled, pitted
- 1 Tbsp lemon or lime juice
- 1 Roma tomato, finely chopped
- ⅓ cup red onion, finely chopped
- 3 cloves garlic, minced
- 1 jalapeño chili, destemmed and deseeded, minced
- 2-3 splashes hot sauce, to taste
- Salt and pepper, to taste
