Instructions

Instructions

  1. Add cheese to each slice of toast and carefully broil until melted.
  2. Remove from the broiler and top with avo-mash.
  3. Salt and pepper to taste.

  • 1 avocado, peeled, pitted
  • 2 Tbsp olive oil
  • 1 cup fresh basil leaves, loosely packed
  • 1 Tbsp lemon juice 
  • 1 clove garlic 
  • Salt and pepper, to taste
  • 1-3 Tbsp water to adjust creaminess if desired

Creamy Avocado Sauce Instructions

  1. Place all sauce ingredients into a blender.
  2. Blend until smooth.
  3. Add water one tablespoon at a time until you achieve the ideal creaminess.
  4. Set aside.

Pasta Ingredients

  • Penne pasta, cooked as desired 
  • 1 avocado, peeled, pitted, cubed
  • 12 cherry tomatoes, halved or quartered
  • ⅓ cup fresh basil leaves, loosely packed
  • ¼ cup parmesan cheese, finely grated

Instructions

  1. Add sauce to drained pasta and stir to combine.
  2. Spoon into serving bowls.
  3. Add avocado cubes, tomato slices, basil leaves, and dust with parmesan cheese.
  4. Serve immediately.
