A Very West Pak Holiday Menu w/ Avocados

Whip up a festive feast with a very West Pak Holiday Menu this season. Celebrate with some avo-inspired takes on your favorite classic dishes and make your dinner table a little more colorful and healthy. Check out the recipes, below:

Baked Sweet Potatoes with Guacamole

Serves 2


  • 2 sweet potatoes
  • 1 jumbo avocado, peeled, seeded
  • 1 tsp. lemon or lime juice
  • 2 Tbsp. red or white onion, finely diced
  • 1 Tbsp. cilantro, finely chopped
  • ¼ tsp. cumin
  • salt and pepper to taste


  1. Mash the avocado flesh in a medium bowl.
  2. Add lemon or lime juice, onion, cilantro, and cumin and mix together. 
  3. Salt and pepper to taste. Set aside.
  4. Preheat oven to 450 degrees.
  5. Line a rimmed baking dish with foil.
  6. Scrub the surface of the potatoes to ensure they are clean.
  7. Place potatoes on a foil-lined dish and poke holes in several places with a fork.
  8. Bake sweet potatoes until tender, 40-50 minutes.
  9. Let cool.
  10. Slit the top vertically.
  11. Spoon on guacamole and serve.

Avocado, Pumpkin & Tofu Salad

Serves 2

Pumpkin Ingredients

  • ¼ of a small pumpkin, seeded
  • 1 tsp. olive oil

Pumpkin Instructions

  1. Cut pumpkin into 3/4-inch slices. 
  2. Remove the skin with a vegetable peeler. 
  3. Brush pumpkin slices with olive oil.
  4. Place on a heated grill for 5 minutes on each side.
  5. Remove from grill and cut into one-inch cubes.
  6. Set aside.

Tofu Ingredients

  • 8 oz. firm tofu, cut into 1/2-inch thick planks
  • 1 tsp. olive oil

Tofu Instructions

  1. Brush both sides of the cheese with olive oil. 
  2. Place tofu on a hot grill or frying pan. 
  3. Reduce to medium heat and grill for 1-2 minutes on each side.
  4. Remove from heat and allow to cool.
  5. Cut into ¾-inch squares


  • 4 cups mixed greens 
  • 1 jumbo avocado, peeled, seeded, cubed
  • 2 Tbsp. olive oil
  • 2 Tbsp. white wine vinegar
  • salt and pepper, to taste


  1. Place olive oil and vinegar in a small jar and tighten the lid
  2. Shake to mix.
  3. Place greens in a medium bowl and drizzle with dressing.
  4. Plate the salad, and top with avocado, pumpkin, and tofu cubes.
  5. Season as desired.
  6. Serve immediately.

Avocado Bruschette

Serves 2


  • 2-4 slices (depending on size) of Pagnotta, ​​Sourdough, or French Baguette
  • 2 avocados, peeled, seeded
  • 1Tbsp. lemon or lime juice
  • 1 clove garlic, minced
  • 1 small tomato, finely chopped
  • 2 Tbsp. white onion, finely chopped
  • 1 Tbsp. cilantro, finely chopped
  • salt and pepper, to taste


  1. Heat oven to 400F.
  2. Brush both sides of the bread with olive oil.
  3. Place on a baking sheet.
  4. Bake for 10-15 minutes, flipping halfway through.
  5. Place avocado in a small bowl and mash with a fork.
  6. Add lemon or lime juice, garlic, tomato, onion, and cilantro, and mix.
  7. Spoon avocado mixture on toast, season as desired, and enjoy.
