Ingredients

  • 2 large, ripe avocados, peeled, pitted
  • 1 Tbsp lemon juice

  • 6-12 Cherry tomatoes, quartered

  • 6 sourdough baguette slices
  • 1.5 Tbsp olive oil

Instructions

  1. Preheat oven to 375˚.
  2. Drizzle olive oil over tomato slices and toss slightly. Place on a baking sheet in a single layer and bake for 15 minutes or until lightly roasted.
  3. Drizzle olive oil over bread slices and place in the broiler to toast.
  4. Place avocado flesh into a small bowl and mash with a fork. 
  5. Mix in lemon juice, and then salt and pepper to taste.
  6. Spread avocado mash over toast slices, add roasted tomatoes, and top with basil.
  7. Serve immediately.

Instructions

  1. Add ingredients for avocado relish to a small bowl and lightly toss. Set aside.
  2. Add dressing ingredients to another small bowl and whisk until mixed.
  3. Add smoked salmon to the bowl and coat with dressing.
  4. Place a spoonful of avocado relish on each slice of toast.
  5. Top with smoked salmon.
  6. Sprinkle with sesame seeds and garnish as desired.
