Turkey Chili with Avocado

Serves 2

Ingredients

  • 1Tbsp olive oil
  • 1 pound ground turkey
  • 1 yellow or white onion, chopped
  • 1 clove garlic, minced
  • 2 Tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp hot sauce
  • 1(15-ounce) can white, black, or kidney beans, drained
  • 1 (14.5oz) can diced tomatoes
  • 1 cup chicken broth
  • salt to taste
  • 1 avocado, chopped
  • 1 cup cheddar cheese, shredded
  • ½ cup sour cream (optional)

Instructions

  1. Heat oil in a heavy pot over high heat, then add turkey and saute until lightly browned. 
  2. Stir in the onions, garlic, hot sauce, and spices. 
  3. Simmer on low heat for 5 minutes.
  4. Add the tomatoes and chicken broth and bring to a boil.
  5. Reduce heat and simmer, stirring occasionally, for 15 minutes.
  6. Add the drained beans and cook for 10 minutes longer. 
  7. Spoon into bowls, top with cheese and sour cream, and serve immediately.

  • salt and pepper, to taste

Dressing Instructions

  1. Place all dressing ingredients into a small bowl.
  2. Whisk together and set aside.

Salad Ingredients

  • 4 cups kale, chopped 
  • 1 sweet potato, cubed, roasted
  • 1 large avocado, sliced

Salad Instructions

  1. Place all salad ingredients into a bowl.
  2. Drizzle with dressing and toss lightly.
  3. Garnish as desired and serve immediately.

  • 1 large avocado, sliced 
  • ¼ cup pumpkin seeds, toasted
  • salt and pepper, to taste

Instructions

  1. Smear cream cheese onto toast.
  2. Layer on arugula, avocado slices, and pumpkin seeds.
  3. Salt and pepper to taste.
  4. Enjoy immediately.
