Dressing Ingredients
- juice of 2 limes
- 3 Tbsp olive oil
- 1 Tbsp cilantro, finely chopped
- salt to taste
Instructions
- Combine the ingredients for the dressing in a small bowl and whisk together.
- Set aside.
Salad Ingredients
- 2 avocados peeled, pitted, and diced
- 1 red bell pepper, diced
- 4 Roma tomatoes, diced
- 1 red onion, peeled and diced
- 1 mango peeled, pitted, and diced
- 15oz can black beans, rinsed and drained
Instructions
- Mix all salsa ingredients in a large bowl.
- Drizzle on the dressing.

Ingredients
- 3 avocados, halved and pitted
- juice from 1 large lime
- 3 Tbsp salsa verde
- 2 Roma tomatoes, finely diced
- 2 Tbsp red onion, finely diced
- 1 Tbsp cilantro, chopped
- 1/2 of a jalapeno, finely chopped
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper
- 1/2 tsp salt
- tortilla chips of choice
Instructions
- Place avocado flesh in a bowl and mash with a fork.

Chipotle Aioli Ingredients
- 1/2 cup plain Greek yogurt
- 2 cloves garlic, minced
- 1 Tbsp lemon juice
- 1 tsp adobo sauce from a can of chipotle peppers (or 1/4 tsp chipotle powder)
- 1/4 tsp salt
- 1/4 tsp ground pepper
Instructions
- In a small bowl, stir the ingredients together.
- Set aside.
Burger Ingredients
- 1 lb. ground angus beef
- 2 chipotle chiles in adobo, seeded
- 1 Tbsp adobo sauce
- 2 Tbsp white onion, finely chopped
- 1 clove garlic, finely minced
- 1 tsp salt
- 1/8 tsp black pepper
- 4 brioche buns
- 1 Beefstake tomato, sliced
- ½ cup pickled onions
Burger Patty Instructions
- In a mixing bowl, combine ground beef, chipotle peppers, adobo sauce, onion, garlic, salt, and black pepper.
- Divide the meat mixture into 4 patties.
- Grill or broil until cooked through.
- Toast the brioche buns.
- Assemble burgers on the bottom half of the bun, starting with a thin layer of chipotle aioli, sliced avocados, beef patties, more aioli, pickled onions, and tomato slices, and then add the top of the bun.
- Devour immediately.
Sizzling Steak Fajitas with Avocado Mash

Avocado Mash Ingredients
- 3 large avocados, halved, pitted, peeled
- 1 tbsp lime juice
- salt to taste

- Place avocado flesh into a small bowl and mash with a fok.
- Add lime juice and mix thoroughly.
- Season to taste.
Steak Fajitas Ingredients
- 2+ lbs skirt steak
- 2-3 bell peppers of choice, sliced
- 1 large yellow onion, sliced
- 2 Tbsp lime juice
- 2 Tbsp pineapple juice
- 2 tsp chili powder
- 1 tsp salt
- 1 tsp paprika
- 1 tsp sugar
- 1/2 tsp ground cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp cayenne pepper
- 2 Tbsp olive oil
- 1/4 cup cilantro, chopped
- 1 package flour tortillas
Instructions
- Add lime and pineapple juices and spices in a small bowl, and then mix well.
- Place steak in a low bowl and coat evenly with the seasoning mixture.
- Marinate for 1-3 hours in the regriderator.
- In a large cast iron skillet, heat olive oil.
- Add steak and cook 3-5 minutes per side, depending on the thickness of the steak.
- Transfer meat to a cutting board and rest for 5 minutes.
- Cut into thin strips.
- Using the same skillet with any remaining drippings and seaoning, add bell peppers and onion and cook until tender.
- Add steak slices back into the skillet and serve sizzling hot with tortillas, cilantro, and avocado mash.
