Three Packable Lunches Using Small Avocados

Smaller avocados, from bags of Lil’ Cados to single size 84s, tend to be a shopper favorite. They ripen faster after purchase while staying greener when cut and refrigerated. They are also the perfect size for single-serving meals and snacks. Here are three recipes to share with your shoppers as they begin their back-to-school season this Fall:

 

Avocado Slices

Serves 1

The easiest avocado recipe around – this recipe shows how to simply slice avocados and add your choice of seasoning for an on-the-go snack.

Ingredients

  • 1 Lil’Cado avocado, sliced
  • salt and pepper, to taste

Instructions

  1. Mix chickpeas, olive oil, tahini, lime juice, and garlic in a food processor for about 2 minutes.
  2. Season with salt and pepper to taste.
  3. Add cumin and avocado and pulse until mixed.
  4. Refrigerate until ready to serve.

Instructions

  1. Cut avocado in half lengthwise and remove the pit.
  2. Remove the peel.
  3. Cut into slices.
  4. Season to taste and devour.

 

Classic Turkey, Avo, BLT

Serves 2

The classic all-American sandwich just got an upgrade with avocados! Add green goodness to crisp bacon, lettuce, and tomato on toasted bread with this recipe.

Ingredients

  • 4 slices whole-wheat bread, toasted
  • 1 Lil’Cado avocado, sliced
  • 1 beefsteak tomato, sliced
  • 8 oz. sliced turkey
  • 4 strips of bacon of choice, crisp
  • 1 cup butter lettuce
  • 2 Tbsp. mayonnaise

Instructions

  1. Place toast on a cutting board and spread a thin layer of mayonnaise on one side.
  2. Add a layer of turkey, bacon, and avocado to two pieces of toast.
  3. Add a second layer of turkey, tomatoes, and lettuce.
  4. Top with the second slice of toast.
  5. Cut diagonally and serve.

 

Avo, Apple & Chicken Salad

Serves 2-3

This flavorful green salad is both refreshing and delightful, made with cubes of rotisserie chicken breast, crisp apples, onion, and of course, avocados.

Ingredients

  • 1 rotisserie chicken breast, shredded 
  • 2 Lil’Cados avocados, pitted, peeled, and diced
  • 2 red apples, cored and diced
  • 1/4 cup red onion, diced
  • 1 tsp. dill 
  • 1 Tbsp. apple cider vinegar
  • 1 Tbsp. olive oil
  • salt and pepper, to taste

Instructions

  1. In a large bowl, mix together the shredded chicken, avocado, apples, and onion.
  2. In a small bowl, whisk together the apple cider vinegar, olive oil, and dill. 
  3. Drizzle dressing over chicken avocado mixture.
  4. Season with salt and pepper. 
  5. Toss gently, garnish as desired, and enjoy.
