California Avocado Salmon Bowl 

This fresh salmon grain bowl features perfectly baked salmon fillets drizzled with a savory-sweet glaze, served over rice with creamy avocado, peas, and seaweed salad for a complete and satisfying meal. It’s an easy, yet elegant, dish that brings together vibrant flavors and textures.

Serves 2

Glaze Ingredients

  • ¼ cup honey
  • 3 cloves garlic, minced
  • 1 Tbsp soy sauce
  • 1 Tbsp rice wine vinegar
  • 2 Tbsp olive oil
  • 1 Tbsp lemon juice

Glaze Instructions

  • Add glaze ingredients to a small bowls nd whisk together.
  • Set aside.


Ingredients

  • 2 6 oz salmon fillets
  • 2 cups cooked rice
  • 1 cup peas
  • 1 cup seaweed salad
  • 1 large ripe avocado, peeled, pitted, sliced
  • ⅓ cup green onion, finely diced
  • 2 Tbsp black sesame seeds
  • Ground black pepper, to taste
  • Lemon wedges

Instructions

  • Preheat oven to 400˚F.
  • Pat the salmon dry with paper towels.
  • Arrange fillets on a lined baking dish.
  • Drizzle with glaze.
  • Basting occasionally, bake for 15-20 minutes, depending on thickness, until the salmon reaches an internal temperature of 145℉.
  • Remove from oven and set aside.
  • In a serving bowl, add rice.
  • Top with salmon, peas, seaweed salad, and avocados.
  • Squeeze the lemon wedges over the assembled bowl(s).
  • Sprinkle with green onions, black pepper, and sesame seeds.
  • Service immediately.

Avocado Citrus Salad

A bright and refreshing spring salad, this recipe combines zesty citrus and creamy avocado with crisp arugula and earthy pickled beets. It’s finished with a light honey-lemon dressing and a crunch of pumpkin seeds.

Serves 2-4 (meal vs. side salad)

Ingredients

  • 2 Tbsp grapeseed or rice wine oil
  • 1 Tbsp white vinegar
  • 1 Tbsp lemon juice

  • 4 cups arugula
  • 1 cup pickled beets, sliced

Instructions

Serves 3-4

Ingredients

  • 1 lb jumbo shrimp, peeled, deveined
  • 3 Tbsp butter, melted
  • ½ tsp garlic powder
  • ¼ tsp paprika
  • ½ cup Panko breadcrumbs
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.
  2. Add garlic powder, paprika, salt, and pepper to half of the melted butter and mix.  
  3. Place the shrimp into a shallow dish. Drizzle half of the seasoned butter on top and mix until evenly coated.  
  4. Add the Panko breadcrumbs to the remaining butter and stir well to combine.
  5. Arrange the shrimp in a single layer in a casserole dish.
  6. Sprinkle the breadcrumb mixture over the shrimp. 
  7. Bake for 12 minutes or until the shrimp is no longer translucent.
  8. Garnish as desired and serve immediately with your favorite guacamole.

  • 2 ripe avocados, peeled, pitted

  • ⅓ tsp garlic salt
  • ⅓ cup feta, crumbled
  • 1 egg, hard-boiled, peeled, halved
  • 1 small tomato, chopped
  • Salt and pepper to taste

Instructions

  1. Place avocado flesh into a small bowl and mash with a fork
  2. Add lemon or lime juice and garlic salt, and then mix.
  3. Spread avocado mash onto toast slices.
  4. Top with feta cheese, boiled eggs, or tomato.
