Avos on the Grill: 4 BBQ Recipes for July 4th

We’re gearing up for the 4th of July with four delicious, must-try recipe featuring avocado:

 

Lemon Chicken Kabobs with Avocado Hummus

Serves 4

Avocado Hummus Ingredients

  • 1 (15 oz) can chickpeas, drained
  • 1 jumbo avocado, peeled and cored
  • 3 Tbsp. olive oil 
  • 2 cloves garlic, minced
  • 2 Tbsp. tahini
  • 3 Tbsp. lime juice
  • 1/8 tsp. cumin
  • salt and pepper to taste

Instructions

  1. Mix chickpeas, olive oil, tahini, lime juice, and garlic in a food processor for about 2 minutes.
  2. Season with salt and pepper to taste.
  3. Add cumin and avocado and pulse until mixed.
  4. Refrigerate until ready to serve.

 

Lemon Chicken Ingredients

  • 2 lbs. chicken breasts, cut into one-inch cubes
  • 2 Tbsp. olive oil
  • 1/4 cup lemon juice
  • 1 clove garlic, minced
  • 1 Tbsp. fresh dill
  • 1 tsp. sea salt
  • 3/4 tsp. paprika
  • 1/4 tsp. cumin

Instructions

  1. Combine all chicken ingredients in a one-gallon bag, seal carefully, and marinate in the refrigerator for at least one hour. 
  2. Thread the meat onto skewers.
  3. Grill meat until it reaches 165˚ F, turning skewers occasionally.
  4. Place on a plate and serve with avocado hummus.

 

Carnitas & Guacamole Tostadas

Serves 4

Piled high with flavorful guacamole and juicy pork topped with onion, jalapeño, garlic and the juice of oranges – your guests will be lining up to try this mouthwatering meal.

Guacamole Ingredients

  • 2 jumbo avocado, peeled, deseeded
  • 2 tsp. lemon or lime juice
  • 1/4 tsp. garlic powder 
  • salt and pepper, to taste

 

Guacamole Instructions

  1. Mash avocados in a small bowl using a fork.
  2. Add lemon or lime juice and garlic powder.
  3. Mix until mostly smooth.
  4. Season to taste.

 

Rub Ingredients

  • 2 tsp. salt
  • 1/2 tsp. ground black pepper
  • 1 tsp. paprika
  • 1 tsp. chili powder
  • 2 tsp. ground cumin
  • 1 Tbsp. olive oil

 

Carnitas Ingredients

  • 1 boneless pork shoulder (3-4 lbs.)
  • 1 onion, chopped
  • 1 jalapeño, deseeded & chopped
  • 3 cloves garlic, minced
  • 1/2 cup fresh orange juice 

 

Carnitas Instructions

  1. Rinse and dry the pork shoulder.
  2. In a small bowl, mix rub ingredients.
  3. Rub the mixture on all surfaces of the meat.
  4. Spray the slow cooker pot with cooking spray and place the meat inside.
  5. Top with the onion, jalapeño, garlic, and the juice of the oranges.
  6. Cover and cook until tender: low heat for 10 hours or high heat for 5-6 hours.
  7. Transfer pork to a cutting board, allow to cool slightly and shred meat using two forks.

 

Tostada Ingredients

  • 1 red onion, sliced thin
  • 4-8 corn tortillas
  • ½ cup corn oil

 

Tostada Instructions

  • Heat the oil in a frying pan.
  • When hot, slide in a tortilla and fry until both sides are lightly golden.
  • Remove from oil and pat dry.
  • Assemble the tostadas by layering on guacamole, carnitas, and red onion, and garnish with cilantro and jalapeño slices as desired.
  • Serve immediately.

 

Avocado, Cucumber & Tuna Salad

Serves 4

Combine tuna, cucumber, avocados for crisp & refreshing twist on a traditional side dish.

Ingredients

  • 15 oz can tuna, drained 
  • 1 cucumber, peeled, chopped
  • 2 jumbo avocados, peeled, pitted, chopped
  • 3 stalks green onion, chopped
  • 2 Tbsp. fresh dill
  • 2 Tbsp. lemon juice
  • 2 Tbsp. olive oil
  • salt and pepper to taste

 

Instructions

  1. Combine tuna, cucumber, avocados, and green onion in a large salad bowl.
  2. Whisk together lemon juice and olive oil, then drizzle over salad ingredients. 
  3. Mix ingredients together.
  4. Sprinkle dill over the top and season to taste with salt and pepper. 
  5. Toss to combine and serve immediately.

 

Grilled Sausage with Guacamole

Serves 4

You might just call this the ultimate “guac” dog, grilled sausage & guacamole on a bun makes for the all-American meal during BBQ season.

Guacamole Ingredients

  • 1 jumbo avocado, peeled, deseeded
  • 1 tsp. lemon or lime juice
  • ⅛ tsp. garlic powder 
  • salt and pepper, to taste

 

Guacamole Instructions

  1. Mash avocado in a small bowl using a fork.
  2. Add lemon or lime juice and garlic powder.
  3. Mix until mostly smooth.
  4. Season to taste.

Ingredients

  • 4 grilled hot dogs or sausage links of choice 
  • 4 hot dog buns

Instructions

  1. Place grilled sausages into buns.
  2. Top with guacamole and garnish of choice.
  3. Serve immediately.
