Party Guac

Serves 3-4

Ingredients

3-4 ripe avocados, seeded and peeled

1 Tbsp. freshly-squeezed lemon juice

½ tsp. jalapeno, diced

1 small tomato, finely chopped

2 Tbsp. red or white onion, finely chopped

Instructions

Mash avocados with a fork and mix in lemon juice and garlic. Stir in remaining ingredients and serve. Guacamole is great as a dip with tortilla chips or sliced veggies or as a topping for meat, eggs, or grilled veggies.

Avocado Tomato Salad

Serves 2-4

Ingredients

2 jumbo avocados, chopped

2 cups red and yellow cherry tomatoes, halved

1 cup sweet corn

1/2 cup sweet onions, sliced

1/3 cup olive oil

2 Tbsp. white or apple cider vinegar

Salt and pepper, to taste

Instructions

  1. Whisk together olive oil and vinegar in a small bowl. Set aside.
  2. Place avocados, cherry tomatoes, corn, and onions in a medium bowl.
  3. Drizzle with dressing and toss lightly.
  4. Salt and pepper to taste, and toss again.
  5. Garnish as desired and serve.

Avocado Harvest Salad

Serves 2

Dressing Ingredients

3 Tbsp. sesame oil

1 Tbsp. white wine vinegar (or apple cider vinegar)

1 tsp. honey

salt and pepper, to taste

Dressing Instructions

Place oil, vinegar, honey, and salt and pepper into a bowl and whisk together. Set aside.

Salad Ingredients

4 cups raw baby spinach

1 avocado, sliced

1 orange, sliced (or 1 10.7oz can Mandarin oranges, drained)

1/3 cup feta cheese, crumbled

1/4 cup pistachio nuts

1/3 cup pomegranate seeds

Salad Instructions

Place spinach, orange, avocado, feta cheese, pomegranate seed, and pistachio seeds into a medium bowl. Drizzle with dressing and toss lightly. Serve immediately.

Avocado Power Smoothie

Serves 2

Ingredients

2 cups coconut, almond, or oat milk

1 cup fresh baby spinach or ½ cup frozen

1 Granny Smith apple, chopped

1 kiwi, peeled and chopped

1 cup green grapes, frozen

1 banana, frozen and chopped

1 avocado, peeled and chopped

1-2 Tbsp. honey or agave

1/3 cup rolled oats

2-3 sprigs of fresh mint (optional)

Instructions

Blend apple, kiwi, frozen grapes, mint, and milk in a blender until smooth. Add avocado, frozen banana, rolled oats, and honey or agave and blend until the mixture is creamy. Pour into glasses, garnish as desired, and serve immediately.
