Chicken, Avocado, Tomato & Arugula Flatbread Pizza

Serves 2



2 whole flatbread

3 Tbsp. olive oil

¼ tsp. garlic powder

1 grilled chicken breast, sliced*

2 cups arugula

1 cup cherry tomatoes, halved

1 large avocado, sliced

1 cup hard parmesan cheese, thinly grated 


*Grilled Chicken

1 boneless chicken breast

1 Tbsp. olive oil

½ tsp. kosher salt

¼ tsp. freshly-cracked black pepper

¼ tsp. garlic powder

¼ tsp. paprika 


Chicken Instructions

  • Combine olive oil, salt, pepper, garlic powder and paprika. 
  • Coat chicken in mixture. 
  • Grill or bake at 425˚ for 16-18 minutes, until internal temperature reaches 165˚


Pizza Instructions

Step 1

  • Mix 1 Tbsp. olive oil with ¼ tsp. garlic powder.
  • Brush the flatbread with the mixture. 
  • Place in preheated to 350˚ oven for 5-8  minutes or until crispy. 
  • Top with two thirds of the parmesan cheese and bake for another 3-5 minutes until cheese melts.


Step 2

  • Mix 2 Tbsp. olive oil with balsamic vinegar.
  • In a medium bowl, combine cherry tomatoes, avocado, and arugula.
  • Drizzle olive oil and balsamic vinegar glaze over the top and toss lightly.
  • Add the remaining cheese and sliced chicken and toss again.
  • Top flatbread with mixture and serve immediately
